# How to Make It:

- Preheat oven to 350°F. Grease and flour two 8-inch round cake pans. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a separate large bowl, beat together granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Stir dry ingredients into the wet mixture until just combined. Fold in grated carrots, chopped nuts, and raisins.
- Divide batter evenly between prepared pans. Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean. Cool in pans 10 minutes, then turn out onto a rack to cool completely.
- Beat softened cream cheese and butter together until creamy. Gradually incorporate powdered sugar and vanilla until smooth.
- Layer cakes with cream cheese frosting between, over the top, and around the sides. Decorate as desired.
- Preheat oven to 250°F. Line a baking sheet with parchment and outline an 8-inch circle. In a clean bowl, beat egg whites to soft peaks, gradually adding superfine sugar until stiff and glossy. Beat in vinegar, cornstarch, and vanilla extract.
- Mound meringue inside the circle, forming a nest shape with raised edges. Bake for 1 hour 15 minutes. Turn off oven and cool pavlova inside with the door ajar for 1 hour.
- Whip heavy cream with powdered sugar and vanilla until soft peaks form. Transfer pavlova to a serving platter, top with whipped cream, and arrange fresh berries and kiwi or passion fruit pulp.
- Combine flour, powdered sugar, and salt in a bowl. Cut in cold butter until mixture is coarse. Mix in egg yolk and ice water just until dough comes together. Press dough into a 9-inch tart pan and chill for 30 minutes.
- Preheat oven to 350°F. Prick crust with a fork, line with parchment, and fill with pie weights. Bake for 15 minutes. Remove parchment and weights, then bake an additional 10 minutes until golden. Cool slightly.
- Whisk together granulated sugar, eggs, and egg yolks in a saucepan. Add lemon juice and zest. Cook over medium heat, stirring constantly, until thickened, about 5 to 7 minutes. Remove from heat and whisk in butter until smooth.
- Pour lemon filling into tart shell. Chill for at least 2 hours until set before serving.
